Knife Handling Skills

For: Anyone wanting to enhance their knife skills

Designed to provide knife knowledge and elevate quality practical skills. Key topics covered include knife anatomy, proper techniques for holding, sharpening, and cleaning a knife, filleting, and safety measures.

Course Content

  • The Anatomy of a Knife: Understanding the different parts of a knife.
  • How to Hold a Knife: Detailed guidance on various grip techniques, both for the handle and the blade.
  • How to Sharpen Your Knives: Step-by-step instructions for knife sharpening, including blade identification, stone preparation, grip and angle, and burr removal.
  • Best Way to Clean a Knife: Tips and techniques for effectively cleaning knives.
  • Knife Safety: Important safety guidelines for handling knives to prevent accidents and cuts.

Course Fee

$130 per person including GST*

*This course fee is subsidised by grant funding from the Tasmanian Government. As part of the funding, the Tasmanian Government require VXT to report on employment outcomes. VXT will reach out to you after the course to gather data on your employment status when you completed the course, and if you were unemployed, did the course help you gain employment.

Enrolment Process

  1. Online: Available by clicking the Enrol Now button next to each course date. The online process will provide three options for payment (invoice, secure credit card or tentative enrolment).
  2. Email: email coures@vxt.org.au with your full name, date of birth, phone number and preferred training date
  3. Telephone: Call the team 03 6387 7244 to register over the phone.

Enrolment Terms

  1. Payment of course fees (or deposit) is required to confirm enrolment and to hold a position.
  2. Cancellations up to 10 working days before the scheduled date will be accepted without penalty. Cancellations less than 10 working days may be subject to a 100% cancellation fee.
  3. VXT reserves the right to cancel the course 10 working days before the scheduled date if insufficient registrations are received. Any fees paid for cancelled courses will be refunded in full.

 ONSITE AT YOUR VENUE

The Knife Handling Skills course can be conducted at your location, making it convenient and easily accessible for your team. To ensure a successful and productive training session, it is important that the venue can provide the following requirements:
  1. Adequate Kitchen Space: that can comfortably accommodate all participants. The kitchen should have ample countertop space, cutting boards, and sinks for practical exercises and cleaning.
  2. Knives and Knife Sharpening Tools: a sufficient number of high-quality knives for each participant and knife sharpening tools such as sharpening stones or honing rods.
  3. Vegetables for Practical Cutting Exercises: Enough for each participant, a variety of vegetables, e.g. pumpkin, turnip, potatoes, carrots.
  4. Catering Services: To keep the participants refreshed and energised throughout the training, we suggest catering services that offer tea, coffee, water, and snacks
  5. Onsite Induction for the VXT Trainer
